A question far from obvious! Italian coffee is a ritual and, as such, revolve around it so many stories, legends and currents of thought. Do you want to discover?

Italians usually are  divided between those who love the espresso coffee made at the bar (which can be short, stained or spotted hot cold glass or cup small or big etc.. Etc ...) and those who are fans of the Italian moka made at home, they go very proud of their habits and abroad it is believed that this kind of coffee is always "too long to wait" or too "watered down". As good fans, they all claim to be the masters in the art of coffee. Tourists for the first time in Italy in general look with curiosity, wonder, and maybe even a little suspicious at this strange object (moka, or "coffee maker"). Maybe because they know that to make the real moka there's a very precise process, but do not know its secrets.

Then, the basic process is this:

1 - fill the base with cold water up to the level of the valve and insert the filter;

2 - fill the filter with ground coffee;

3 - screw tightly the two parts of moka, which are the filter and the gasket;

4 - put the coffee maker on the stove over low heat;

5 - As soon as the coffee and salt begins to bubble, remove from heat and immediately pour the coffee maker in your cup.

So far, it seems quite clear. But read carefully the second step. Thats one of the crucial moments in which it can decide the fate of your coffee!
